The Sacred Art of Bilona Churning

Why Curd Fermentation is Crucial
The Microbial Transformation
When whole milk is cultured into curd (dahi), beneficial lactic acid bacteria break down milk proteins (casein) and milk sugars (lactose). During subsequent wooden churning, these proteins remain suspended in the buttermilk (chaas), leaving only pure, digestible lipid structures in the makkhan butter.
When this butter is simmered, the remaining milk solids caramelize gently at the bottom of the vessel, releasing short-chain fatty acids (like butyric acid) that impart the legendary nutty aroma and granular texture to Arhah Ghee.
